Right now I'm caught in a vicious (although delicious) cycle. It started because I pureed our Halloween/Thanksgiving pumpkin, so I ended up with an amount of pumpkin that didn't quite match up with what you buy in a can (which is how recipes are usually scaled). And it goes something like this:Make pumpkin soup with my fresh pumpkin. Realize I need just a little more pumpkin, so open a can. Only use a few scoops, so put extra pumpkin in the fridge. Decide I need to use up the extra pumpkin, so make pumpkin cupcakes. Still have some leftover pumpkin. Decide to make more pumpkin cupcakes because I'm obsessed with them. Realize after all the other ingredients are mixed together that I only have half the pumpkin I need. Open another can. Only use a few scoops, so put extra pumpkin in the fridge . . . Repeat.

I'll eat some of it if you need me to.
What a delicious cycle! ;)
I love some pumpkin in my oatmeal with pumpkin spice...or just cinnamon nuts are good with it too!! That is an easy little way to use up some.
Logan said only make half of the cupcakes so that you don't need extra pumpkin.
I hate it when stuff like that happens with food because I hate throwing anything away.
And pumpkin cupcakes sounds so good! Is there an online recipe for it?
Good idea, Chelsea.
Logan is a wise man, Hillary. The problem last time was that I didn't realize I didn't have enough pumpkin until everything else was already mixed together and it was impossible to cut the recipe in half. I'll have to remember next time, though.
Susie, I'll e-mail you the recipe.
Hey Sarah- I am currently undergoing some pretty extensive genetics testing (since I've had 4 miscarriages now) and need your CF info for one of my many blood tests to look for the right gene. Can you e-mail me your phone number ASAP? My e-mail is heathergibby@hotmail.com
Thanks!
Heather
